Yazdi cupcakes-Persian style cupcakes scented with cardamom (کیک یزدی)

Yazdi cupcakes served with black tea

Ingredients: 2.5 cup flour, 1 cup sugar, 0.6 cup plain yogurt , 0.8 cup  oil, 3 eggs , 1 teaspoon 

baking powder , 1 teaspoon cardamom, 1 teaspoon vanilla extract

  1. In a mixing bowl, add eggs, sugar , oil and yogurt and whisk using an electric mixer or a hand mixer until smooth. 
  2. In a second bowl, add flour, cardamom, baking powder and mix thoroughly. 
  3. Add flour mixture to the egg mixture and whisk until well blended (no more mixing needed).
  4. Preheat oven.
  5. Pour the mixture into cupcake molds to the point that completely filled with the mixture(keep no room).
  6. Using a greased knife or spatula, make a + sign on top of each cupcake .
  7. Bake for 10 minutes on 400 F(200C) then for 20 minutes on 350 F(180C). 
  8. Serve with hot tea!
