Quince stew

Quince stew w. rice
Ingredients: 1 large quince, 2 medium onions,half lb stew beef/lamb, 10 pitted prunes (unsweetened), 2 tbs barberries (kind of Persian berries), Juice of 1 fresh lime, 2 tbs tomato paste, 1 teaspoon turmeric, 1 teaspoon cinnamon, saffron as you wish

Slice the quince and take the core out carefully
Caramelize 1 onion and set aside for the end
Rinse pitted prunes, no need to take the seed out
Cook beef/ lamb with 1 onion , salt and pepper till cooked perfectly.
Saute the tomato paste with oil in a large pan, add quince, prunes,beef, cinnamon, 3 cups of boiled water and cook for 1.5 hour. 
Add saffron, barberries and lime juice, let simmer for 15 minutes until the sauce thickens.

Serve with Basmati rice topped with brewed saffron
