Chicken fillet skewers , veggies, caramelized onions !

















Ingredients: ( for 6 skewers, light dinner for two)
1. half a large chicken breast, striped
2. White mushrooms
3. Half a bell pepper ( in 2 colors)
4. 1 large onion
5.  4 tbs lemon juice
6. 1 teaspoon sugar
7. A pinch of lemon pepper & McCormick steak seasoning
8. olive oil
9. A cup of white wine or beer or even champagne for onions!

For veggies:
1.Cut bell peppers and saute  for 5 minutes while stirring on high heat with 2 tbs of lemon juice. (Otherwise you cannot shape it the way you want it)
2. Cut mushrooms in half.( No need for cooking beforehand)

For magic caramelized onion:
This is the main flavor you will add to this delicious dish!
1. Slice an onion very thin
2. Heat a small pan with 2 tbs of olive oil. (No salt please!)
3. Saute onions for 10 minutes on medium heat. Stir until browned.
2. Add half a cup beer or white wine  to onions and cook for 10 more minutes with covered top. (The natural sugar inside the onion comes out and becomes caramelized by cooking! interesting huh?)

For chicken:
2. Cut the fresh chicken breast in 1 cm thick strips.
2. Roll them to form a circular shape.( you can be creative at this step!)
3. Skewer the chicken strips
4. Do the same for bell peppers (roll and add to skewers)
5. Put the skewers in a large pan. You can cut the skewers if too long.
6.Add 1 tbs of caramelized onions (leave the rest for serving)
7. Add seasonings: lemon juice, lemon pepper and steak seasoning, sugar and 1 tbs of olive oil,
8. Cover the top and cook on low heat for 15 minutes.
9. uncover and let it cook till golden for about 10 minutes. Meanwhile you need to flip the skewers to grill both sides.

A bed of caramelized onion!
Ready to cook!

Almost golden!


Cover your plate with caramelized onions, top with skewers and serve with salad and white wine!
